And the ‘Aam Ka Season’ has arrived…

Yummm…. Who on the earth would not love mangoes? As we all know, Mango is called KING of all the fruits and is almost fascinated by everyone.

And the ‘Aam Ka Season’ has arrived

Gujaratis, Marathis or Keralians, Mango and its recipes are enjoyed by everyone throughout the summer in India. Aam Ras, Aam Panna, Aam Papad, Aam Shake, etc. are some common recipes, but I am going to explore a complete ‘Aam Meal’ including more creative, ethnic and traditional recipes today. Please have a look!

Mambazha Pulissery

It is a Keralian curry variety that tastes tangy sweet. It is usually served with rice. It takes hardly 15 minutes to prepare Mambazha Pulissery.

Mambazha Pulissery

Ingredients:

  • Ripe Mangoes: 3 Peeled & Diced
  • Coconut: 1 Cup Grated
  • Onion: 1 Big Chopped
  • Green Chili: 3 Finely Chopped
  • Cumin Seeds: ½ Table Spoon
  • Turmeric Powder: 1 Pinch
  • Garlic paste: 1 Table Spoon
  • Yogurt: 1 Cup
  • Water: ½ Cup
  • Coconut Oil: 2.5 Table Spoons
  • Salt: As per taste
  • Dry Red Chilies: 2
  • Curry Leaves: 7
  • Mustard Seeds: ½ Table Spoon
  • Fenugreek Seeds: ½ Table Spoon

Procedure:

  • In a mixture, take cumin seeds, grated coconut and garlic paste and grind them to make a fine paste.
  • Add a little water in diced mangoes and cook it in a closed vessel for 5-7 minutes on low flame.
  • Now open the lid and smash some mango pieces.
  • Add half cup of water, chopped green chilies and onion in it.
  • Stir it occasionally and meanwhile, beat the yogurt and make it smooth.
  • Add beaten yogurt, turmeric powder and salt in that vessel.
  • Let it cook on slow flame for 2 more minutes and put it aside. Only tadka is left for Mambazha Pulissery.
  • In another small pan, add 2.5 tablespoons of coconut oil and put fenugreek and mustard seeds.
  • When they splutter, add dry red chilies and curry leaves. Add this into prepared Mambazha Pulissery.
  • Transfer it to serving bowl, garnish with a few curry leaves.
  • Serve it hot with Keri Bhaat (recipe is below).

Keri Bhaat

Ingredients:

  • Raw Mango: 1 Big Grated
  • Rice: 1½ Bowl, Cooked
  • Chanaa Daal: 1 Cup, Soaked
  • Seesame Seeds: 1 Cup, Grinded
  • Red Chilies: 2-3
  • Cumin Seeds: ½ Table Spoon
  • Mustard Seeds: ½ Table Spoon
  • Asafoetida: A pinch
  • Oil: 2 Table Spoons
  • Curry Leaves: 7-8
  • Coriander: ½ Table Spoon, Finely Chopped
  • Turmeric Powder: ½ Table Spoon
  • Salt: To Taste
  • Powdered Sugar: ½ Table Spoon

Procedure:

  • Cook 1½ bowl of rice and let it cool for some time.
  • In a vessel, take cooked rice, grated raw mango and Chanaa Daal and mix it well.
  • Add grinded seesame seeds, salt and powdered sugar in the mixture.
  • Now take a wok and add 2 table spoons of oil, turn on the flame.
  • Add mustard seeds as well as cumin seeds in the oil.
  • Add curry leaves and red chilies in the oil as well.
  • Then add a pinch of turmeric powder, asafetida and add it into the mixture of rice and mango.
  • Mix it well and take it in a serving plate.
  • Garnish with chopped coriander and the Keri Bhaat is ready to serve ;)

Ingredients:

  • Raw Mango: 1 Big Grated
  • Coconut: 1 Cup Grated
  • Coconut Oil: 2 Table Spoons
  • Red Chilies: 2
  • Cumin Seeds: 1/2 Table Spoon
  • Coriander Seeds: 1/2 Table Spoon
  • Urad Daal: 1/2 Table Spoon
  • Garlic: 5-6 Cloves
  • Green Chilies: 3
  • Curry Leaves: 7-8 Leaves
  • Salt: To Taste

Procedure:

  • In a pan, take coconut oil and turn on the flame.
  • Add red chilies and curry leaves in the oil.
  • Also add cumin seeds, coriander seeds and Urad daal.
  • After it gets a little brown, add garlic cloves and green chilies.
  • Add grated raw mango in it and cook it for 3 to 4 minutes.
  • Turn off the flame and as per taste, add a pinch of salt.
  • Now add grated coconut in it.
  • Take whole this mixture in a blender and blend it in nice chutney.
  • Tangy yummy chutney is ready to serve!

All the above recipes form a perfect summer meal. So make it and enjoy the taste of juicy mangoes throughout the summer season.
